They can be used to form other compounds, such as <a href=\"https:\/\/www.selfhacked.com\/blog\/triglycerides\/\">triglycerides<\/a> and <a href=\"https:\/\/selfhacked.com\/blog\/hdl-cholesterol\/\">cholesterol<\/a> [<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/30304860\">R<\/a>].<\/p>\n<p>There are many different types of fatty acids and they can be classified in several ways.<\/p>\n<p>For example, fatty acids can be grouped based on how long their structure is, such as short-chain, medium-chain, and long-chain fatty acids [<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/30304860\">R<\/a>].<\/p>\n<h3>Saturated vs Unsaturated Fatty Acids<\/h3>\n<p>Another important way to categorize fatty acids is whether they are saturated or unsaturated.<\/p>\n<p><a href=\"https:\/\/selfhack.com\/blog\/saturatedfats-low-carb-diet-vs-high-carb-diet\/\">Saturated fatty acids<\/a> have no double bonds in their chemical structure. Because of this structure, saturated fats tend to be solid at room temperature [<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/30304860\">R<\/a>].<\/p>\n<p>Some examples of saturated fatty acids include [<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/26177664\">R<\/a>]:<\/p>\n<ul>\n<li>Lauric acid<\/li>\n<li>Stearic acid<\/li>\n<li><a href=\"http:\/\/selfhacked.com\/blog\/caprylic-acid\/\">Caprylic acid<\/a><\/li>\n<\/ul>\n<p>Unsaturated fatty acids have one or more double bonds in their chemical structure.
