If so, then you know that <b>people with histamine intolerance don\u2019t have enough diamine oxidase (<\/b><a href=\"https:\/\/selfdecode.com\/gene\/aoc1\/\"><b>DAO<\/b><\/a><b>)<\/b>, the enzyme that breaks histamine down in the gut. Many foods &#8211; especially cured and fermented meat and fish &#8211; are rich in histamine and other bioactive amines. Your symptoms may have a different underlying cause, and if histamine is the culprit, a medical professional can help guide you through the appropriate management strategies, which may include a low histamine diet.<\/p>\n<h3><span id=\"1_Chronic_Headaches_Migraine\"><b>1) Chronic Headaches &amp; Migraine<\/b><\/span><\/h3>\n<p>Histamine is a <b>well-known cause of headaches and a possible culprit behind some people\u2019s<\/b><a href=\"http:\/\/selfhacked.com\/blog\/natural-treatment-migraines\/\"> <b>migraines<\/b><\/a>. Some researchers suspect type 3 and 4 histamine receptors are responsible for migraines, but specific studies are lacking [<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/17490952\">R<\/a>,<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/24433203\"> R<\/a>,<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/30909864\"> R<\/a>].<\/p>\n<p>One study found that <b>a diet low in vasoactive amines improved chronic headaches in 73% of patients<\/b>. In this same study, histamine-rich foods were reintroduced and reliably caused headaches to occur again [<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/10779289\">R<\/a>,<a href=\"http:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC4604636\/\"> R<\/a>].<\/p>\n<h3><span id=\"2_Itching_Rash\"><b>2) Itching &amp; Rash<\/b><\/span><\/h3>\n<p>Histamine is best-known for its ability to induce itching and skin rashes. Once released by mast cells, <b>histamine stimulates C fibers, the types of nerves that make us feel itchy <\/b>[<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC2519061\/\">R<\/a>,<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC3276885\/\"> R<\/a>,<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC2492902\/\"> R<\/a>].<\/p>\n<p>Histamine also <b>allows fluid and<\/b><a href=\"https:\/\/selfhacked.com\/blog\/how-to-increase-and-decrease-white-blood-cells\/\"> <b>white blood cells<\/b><\/a><b> to leak out of the capillaries and lymphatic vessels<\/b> and into the skin tissue, creating a rash. Antihistamine medication is often used to control itching and skin rashes for this reason [<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC2519061\/\">R<\/a>,<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC3276885\/\"> R<\/a>,<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC2492902\/\"> R<\/a>].<\/p>\n<p>One study reported that <b>27 out of 44 (61%) people had a significant improvement in hives, skin swelling, and itching on a diet low in dietary amines<\/b>, although foods containing additives or naturally high in<a href=\"https:\/\/selfhacked.com\/blog\/salicylate-sensitivity\/\"> salicylates<\/a> were also restricted [<a href=\"http:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC4604636\/#CR72\">R<\/a>].<\/p>\n<h3><span id=\"3_Skin_Swelling\"><b>3) Skin Swelling<\/b><\/span><\/h3>\n<p>As mentioned in the previous point, histamine allows fluid and white blood cells to leak out of the capillaries and lymphatic vessels and into surrounding tissues. When this fluid builds up in the deep layers of the skin, it creates a <b>painless, puffy swelling<\/b> called angioedema [<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC5515622\/\">R<\/a>,<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC2492902\/\"> R<\/a>].<\/p>\n<p>Angioedema usually requires medical treatment, but a low histamine diet may also help. People with angioedema used <b>less antihistamine medication while eating a histamine-reducing diet<\/b> compared to a control group that eliminated<a href=\"http:\/\/selfhacked.com\/blog\/interesting-facts-artificial-sweeteners\/\"> artificial sweeteners<\/a> from their diet [<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/11551340\">R<\/a>].<\/p>\n<h3><span id=\"Other_Potential_Benefits_Lacking_Evidence\">Other Potential Benefits Lacking Evidence<\/span><\/h3>\n<p>Some researchers believe that low histamine diets can have benefits in other cases based on human physiology, but these have not specifically been the subject of clinical trials. Talk to your doctor about whether decreasing dietary amines could be appropriate in your case.<\/p>\n<h4>4) Some IBS Cases<\/h4>\n<p>Irritable bowel syndrome (<a href=\"https:\/\/selfhacked.com\/blog\/causes-ibs-general-gut-dysfunction\/\">IBS<\/a>) is a condition in which<a href=\"https:\/\/selfhacked.com\/blog\/fodmap-diet\/\"> certain foods<\/a> trigger gut inflammation, abdominal discomfort, and poor stool quality. <b>People with IBS often have far more mast cells in their intestines than normal<\/b>, suggesting that histamine is at least partially responsible for some of the symptoms of this disease [<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC4819856\/\">R<\/a>,<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC5225338\/\"> R<\/a>].<\/p>\n<p>Fifty-eight percent of adult patients with irritable bowel syndrome (<a href=\"https:\/\/selfhacked.com\/blog\/causes-ibs-general-gut-dysfunction\/\">IBS<\/a>) believe that foods rich in vasoactive amines, such as wine, beer, salami, and cheese, are a cause of their symptoms [<a href=\"http:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC4604636\/#CR78\">R<\/a>].<\/p>\n<p>A low FODMAP diet is well-researched for improving IBS. This diet works, in part, by lowering histamine. But despite its overlap with a low histamine diet, it still allows certain histamine-containing foods (such as spinach, tomatoes, and <a href=\"https:\/\/selfhacked.com\/blog\/kefir\/\">kefir<\/a>) [<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/26976734\">R<\/a>,<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/27248703\"> R<\/a>].<\/p>\n<p>Surprisingly, <b>no studies have yet investigated the effect of a low histamine diet in people with IBS<\/b>. Given the involvement of mast cells in this condition, however, it may be worth a try. If you decide to test the effect of reducing histamine on your IBS, keep a diary of your symptoms and make sure to be honest with yourself [<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC6423692\/\">R<\/a>].<\/p>\n<div class=\"sh-summary\"><div class=\"sh-summary-content\">People with IBS have more mast cells in their intestines. However, no studies have yet investigated whether low histamine diets improve IBS.<\/div><\/div>\n<h4>5) Menstrual Pain<\/h4>\n<p><a href=\"https:\/\/selfhacked.com\/blog\/estradiol\/\">Estrogen<\/a> and histamine interact strongly with each other: histamine increases the production of estrogen (through H1R). Estrogen then stimulates the release of <a href=\"https:\/\/selfhacked.com\/blog\/prostaglandins\/\">prostaglandin<\/a> F2\u03b1, a hormone that makes the muscles of the uterus contract, producing painful cramping. This is probably why women with histamine intolerance often have severe cramps during their periods [<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/17490952\">R<\/a>].<\/p>\n<p>To make matters worse, estrogen may also increase sensitivity to histamine. Women are more sensitive to histamine skin-prick tests during ovulation, when estrogen peaks, than at any other time [<a href=\"http:\/\/ajcn.nutrition.org\/content\/85\/5\/1185.long\">R<\/a>,<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/7553250\"> R<\/a>].<\/p>\n<p><b>A low histamine diet has not specifically been tested in women with menstrual headaches and cramps.<\/b> However, given histamine\u2019s potential involvement in menstrual pain, it seems worth a try [<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/17490952\/\">R<\/a>].<\/p>\n<p>During pregnancy, DAO is produced at very high concentrations by the placenta, and its concentration may rise to over 500 times normal. DAO breaks down histamine. Its increased activity may be the reason why women with food intolerance frequently go into remission during pregnancy [<a href=\"http:\/\/ajcn.nutrition.org\/content\/85\/5\/1185.long\">R<\/a>].<\/p>\n<p><b>Women with <\/b><a href=\"http:\/\/selfhacked.com\/blog\/deal-histamine\/\"><b>histamine issues<\/b><\/a><b> tied to their menstrual cycles may also consider supplements that increase DAO production<\/b> and activity, such as <a href=\"https:\/\/selfhacked.com\/blog\/need-know-vitamin-c-32-science-based-health-benefits\/\">vitamins C<\/a> and <a href=\"https:\/\/selfhacked.com\/blog\/vitamin-b6\/\">B6<\/a> [<a href=\"http:\/\/onlinelibrary.wiley.com\/doi\/10.1111\/all.12330\/full\">R<\/a>].<\/p>\n<div class=\"sh-summary\"><div class=\"sh-summary-content\">Despite a lack of specific research, women with menstrual pain may want to try a low histamine diet.<\/div><\/div>\n<h2><span id=\"Factors_that_May_Affect_Histamine_Release\"><b>Factors that May Affect Histamine Release<\/b><\/span><\/h2>\n<p>Unfortunately, if you\u2019re intolerant, it may not be enough to avoid foods rich in histamine. A bad reaction may also result simply from the activation of mast cells.<\/p>\n<p>Mast cells are white blood cells present in most tissues surrounding blood vessels and nerves. They are especially abundant in areas that interact with the outside world: the <b>skin, lungs, digestive tract, mouth, eyelids, and nose<\/b> [<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC4701915\/\">R<\/a>,<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC4282993\/\"> R<\/a>].<\/p>\n<p>When mast cells are activated, they release histamine and a handful of other compounds. Mast cell activation plays a central role in asthma, hives, hay fever, anaphylaxis, eczema, itching (pruritus), pain, and autoimmunity. It also suppresses fertility and sperm motility in men [<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC4701915\/\">R<\/a>,<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC4171343\/\"> R<\/a>,<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC4402170\/\"> R<\/a>,<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/21895475\"> R<\/a>].<\/p>\n<p>This section will discuss <b>common triggers to avoid<\/b> if you want to stabilize your mast cells, preventing them from freeing histamine. It\u2019s important to talk to your doctor about symptoms of excess histamine; <b>a medical professional can accurately diagnose any underlying conditions and help develop an appropriate treatment or management plan.<\/b><\/p>\n<div class=\"sh-summary\"><div class=\"sh-summary-content\">Mast cells release histamine in response to external triggers. In theory, preventing mast cell activation may improve histamine symptoms.<\/div><\/div>\n<h3><span id=\"1_Stress\"><b>1) Stress<\/b><\/span><\/h3>\n<p>Whenever the <a href=\"https:\/\/selfhacked.com\/blog\/factors-counteract-stress-response\/\">stress response<\/a> is set off, the <a href=\"https:\/\/selfhacked.com\/blog\/hypothalamus-101\/\">hypothalamus<\/a> releases <a href=\"http:\/\/selfhacked.com\/blog\/why-your-health-problems-worsen-after-stress-the-role-of-crh\/\">corticotropin-releasing hormone<\/a> (<a href=\"http:\/\/selfhacked.com\/blog\/why-your-health-problems-worsen-after-stress-the-role-of-crh\/\">CRH<\/a>), which in turn triggers the release of<a href=\"https:\/\/selfhacked.com\/blog\/need-know-cortisol-health-effects\/\"> cortisol<\/a>. <b>CRH also activates mast cells, which indirectly cause an increase in the release of<\/b><a href=\"https:\/\/selfhacked.com\/blog\/histamine\/\"> <b>histamine<\/b><\/a>. Cortisol, by contrast, may block histamine secretion in cells to keep the immune system in check. The <a href=\"https:\/\/selfhacked.com\/blog\/63-factors-raising-stress-cortisol-level-backed-science\/\">stress<\/a> pathway has opposing effects on histamine [<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/books\/NBK279017\/\">R<\/a>,<a href=\"http:\/\/www.ncbi.nlm.nih.gov\/pubmed\/9629233\"> R<\/a>,<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/6199955\"> R<\/a>,<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC3047790\/\"> R<\/a>].<\/p>\n<p><b>CRH also activates brain mast cells to release inflammatory cytokines such as<\/b><a href=\"http:\/\/selfhacked.com\/blog\/interleukin-6\/\"> <b>IL-6<\/b><\/a><b> and<\/b><a href=\"http:\/\/selfhacked.com\/blog\/il-8\/\"> <b>IL-8<\/b><\/a><b>; <\/b>it stimulates<a href=\"https:\/\/selfhacked.com\/blog\/monocytes\/\"> monocytes<\/a> to release <a href=\"http:\/\/selfhacked.com\/blog\/interleukin-1\/\">IL-1<\/a>, another inflammatory cytokine. This process increases the permeability of the blood-brain barrier; that is, more compounds can cross from your blood into your brain [<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC2343625\/\">R<\/a>,<a href=\"http:\/\/www.ncbi.nlm.nih.gov\/pubmed\/17127408\"> R<\/a>].<\/p>\n<div class=\"sh-summary\"><div class=\"sh-summary-content\">When we\u2019re stressed, our bodies increase CRH, which triggers mast cells to release histamine. Reducing stress may, therefore, reduce histamine reactions.<\/div><\/div>\n<h3><span id=\"2_IgE_Allergens\"><b>2) IgE Allergens<\/b><\/span><\/h3>\n<p>According to some studies, <a href=\"http:\/\/selfhacked.com\/blog\/supplements-people-th2-dominant\/\">Th2<\/a><a href=\"https:\/\/selfhacked.com\/blog\/supplements-foods-exercise-right-type-th1-vs-th2-dominance\/\"> immunity<\/a> may exacerbate issues with histamine: B cells produce IgE antibodies, which in turn stimulates mast cells to release histamine [<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC3597223\/\">R<\/a>, <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/11292031\">R<\/a>].<\/p>\n<p>If you have histamine problems, you may want to make lifestyle and diet changes and take supplements to<a href=\"https:\/\/selfhacked.com\/blog\/supplements-people-th2-dominant\/\"> suppress your Th2 system<\/a>. Talk to your doctor about allergy tests and strategies to reduce histamine.<\/p>\n<h3><span id=\"3_Infections\"><b>3) Infections<\/b><\/span><\/h3>\n<p>Sometimes, if people have <b>chronic infections<\/b>, they may develop high histamine, possibly from excessive activation of mast cells. Mast cells get activated by parasites through IgE responses, for example [<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC5382204\/\">R<\/a>,<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC5010491\/\"> R<\/a>].<\/p>\n<h3><span id=\"4_Leptin\"><b>4) Leptin<\/b><\/span><\/h3>\n<p><a href=\"http:\/\/selfhacked.com\/blog\/all-about-leptin-its-role-in-chronic-inflammation-cfs-and-weight\/\">Leptin<\/a>, a hormone that reduces appetite and promotes<a href=\"http:\/\/selfhacked.com\/blog\/a-comprehensive-list-of-effective-ways-to-lose-weight\/\"> weight loss<\/a>, may have to do with histamine intolerance. <b>Leptin and leptin receptors can be found in mast cells in your skin, lungs, gut, and urogenital tract<\/b> [<a href=\"http:\/\/www.ncbi.nlm.nih.gov\/pubmed\/19241089?dopt=AbstractPlus\">R<\/a>].<\/p>\n<p>As leptin levels increased in people with metabolic syndrome, so did the number of mast cells in their fat tissue, suggesting that <b>leptin may stimulate mast cells to multiply<\/b>.<b> Leptin may also increase the activity of mast cells and make them more inflammatory<\/b> [<a href=\"http:\/\/www.ncbi.nlm.nih.gov\/pubmed\/11935372\">R<\/a>,<a href=\"http:\/\/www.ncbi.nlm.nih.gov\/pubmed\/26481668\"> R<\/a>].<\/p>\n<p>Leptin may increase mast cell activation in children with asthma who<a href=\"https:\/\/selfhacked.com\/blog\/top-14-proven-health-benefits-exercise-references-mechanisms\/\"> exercise<\/a> [<a href=\"http:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC4406702\/\">R<\/a>].<\/p>\n<p>For more information on leptin, chronic inflammation, chronic fatigue, and weight, check out<a href=\"https:\/\/selfhacked.com\/blog\/all-about-leptin-its-role-in-chronic-inflammation-cfs-and-weight\/\"> this post<\/a>.<\/p>\n<h3><span id=\"5_Nerve_Growth_Factor_NGF\"><b>5) Nerve Growth Factor (NGF)<\/b><\/span><\/h3>\n<p><a href=\"http:\/\/selfhacked.com\/blog\/all-about-nerve-growth-factor-and-50-ways-to-increase-it\/\">Nerve growth factor<\/a> <b>(NGF) activates mast cells and triggers the release of histamine<\/b>, <a href=\"http:\/\/selfhacked.com\/blog\/a-comprehensive-list-of-natural-ways-to-increase-bdnf\/\">BDNF<\/a>, and other neurotrophins. This is one of the mechanisms by which NGF worsens inflammation and increases sensitivity to heat and pain [<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/9121681\">R<\/a>,<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/25846614\"> R<\/a>].<\/p>\n<p>During mentally or emotionally stressful events, NGF is released in the hypothalamus and bloodstream. Thus, NGF contributes to the effects of stress on histamine release and inflammation [<a href=\"http:\/\/www.ncbi.nlm.nih.gov\/pubmed\/7772704\">R<\/a>].<\/p>\n<p>NGF-induced histamine release may also play a role in the development and progression of autoimmunity. A number of autoimmune conditions, such as <a href=\"https:\/\/selfhacked.com\/blog\/causes-symptoms-diagnosis-risk-factors-of-multiple-sclerosis\/\">multiple sclerosis<\/a> and rheumatoid arthritis, are characterized by high NGF and more mast cells in affected tissues [<a href=\"http:\/\/www.ncbi.nlm.nih.gov\/pubmed\/7772704\">R<\/a>,<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/29174194\"> R<\/a>,<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC2714133\/\"> R<\/a>].<\/p>\n<h3><span id=\"6_Bradykinin\"><b>6) Bradykinin<\/b><\/span><\/h3>\n<p><a href=\"https:\/\/selfhacked.com\/blog\/bradykinin\/\">Bradykinin<\/a> is a protein that causes blood vessels to dilate (enlarge) and therefore causes blood pressure to fall [<a href=\"https:\/\/www.sciencedirect.com\/science\/article\/pii\/B9780123741455003181\">R<\/a>].<\/p>\n<p>Bradykinin triggers histamine release, possibly via an increase in calcium within our cells [<a href=\"http:\/\/www.ncbi.nlm.nih.gov\/pubmed\/7513032\">R<\/a>,<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/8630003\"> R<\/a>].<\/p>\n<p>ACE inhibitors or blood pressure-lowering drugs increase bradykinin. ACE inhibitors may also constrict our airways, which makes sense because histamine causes such effects. Therefore, people with histamine issues would be wise to stay away from ACE-inhibiting drugs, unless absolutely necessary [<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/27260014\">R<\/a>].<\/p>\n<h3><span id=\"Other_Potential_Factors_Lacking_Evidence\">Other Potential Factors Lacking Evidence<\/span><\/h3>\n<p>Some animal and cell research suggests a possible role for the factors in this section, but these have not been investigated in humans. Talk to your doctor about the extent to which any of these may be involved in your health.<\/p>\n<h4>7) Mold<\/h4>\n<p><b>According to some researchers, exposure to molds may induce histamine release from mast cells<\/b> [<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/8972692\">R<\/a>,<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC4397360\/\"> R<\/a>].<\/p>\n<p>Mold, which is in all of our homes to one degree or another, is among the most common biotoxins. <i>Aspergillus<\/i>, <i>Stachybotrys<\/i>, and other types of molds can cause reactions [<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC4397360\/\">R<\/a>].<\/p>\n<p>Not only mold, but also <b>algae, bacteria, volatile organic compounds (VOCs), and other chemicals from the mold<\/b> can be activators of histamine-mediated inflammation [<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC145304\/\">R<\/a>,<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC4591661\/\"> R<\/a>].<\/p>\n<h4>8) Lectins<\/h4>\n<p>According to some researchers, <a href=\"https:\/\/selfhacked.com\/blog\/elimination-diet-safest-foods-people-sensitive-everything\/\">lectins<\/a> can bind to the lining of the intestine and increase its permeability; that is, they can make your gut \u201cleaky.\u201d Undigested lectins can then enter the bloodstream [<a href=\"http:\/\/www.ncbi.nlm.nih.gov\/pubmed\/2262064\/\">R<\/a>,<a href=\"http:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC1941928\/#b7\"> R<\/a>].<\/p>\n<p>Lectins such as concanavalin A (ConA) are among the best-studied food components that trigger mast cells and<a href=\"https:\/\/selfhacked.com\/blog\/basophils\/\"> basophils<\/a> in a lab setting [<a href=\"http:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC1941928\/\">R<\/a>].<\/p>\n<p>Lectins target sugar molecules in IgE antibodies, which can then trigger histamine release. In the diagram below, the Ys are IgE antibodies, the red dots are the sugar molecules, and the purple egg is a<a href=\"https:\/\/selfhacked.com\/blog\/lectins-beneficial-harmful\/\"> lectin<\/a>. Cooked potatoes still retain about half of the biological activity of their lectins, so <b>even cooking them won\u2019t get rid of the problem<\/b>, but it does improve it to a large extent [<a href=\"http:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC1941928\/\">R<\/a>].<\/p>\n<p>The following lectins have been found to increase histamine release in cell studies:<\/p>\n<ul>\n<li><b>White potatoes and unmodified<\/b><a href=\"https:\/\/selfhacked.com\/blog\/potato-starch-source-resistant-starch\/\"> <b>potato starch<\/b><\/a>, which activate both mast cells and basophils. People who eat more potatoes may experience more symptoms of food sensitivity [<a href=\"http:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC1941928\/\">R<\/a>].<\/li>\n<li><b>Tomatoes<\/b>. Tomato lectin is similar to potato lectin [<a href=\"http:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC1941928\/\">R<\/a>].<\/li>\n<li><b>Soy<\/b>. Soybean agglutinin (SBA) directly triggers mast cells to release histamine [<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC5855776\/\">R<\/a>,<a href=\"http:\/\/www.ncbi.nlm.nih.gov\/pubmed\/51003\"> R<\/a>].<\/li>\n<li><b>Grains that contain<\/b> gluten, which in turn contains wheat germ agglutinin (WGA). However, this evidence is contradictory. It could be that WGA increases histamine release, but when histamine is released the stores get used up for a bit, and histamine is inhibited [<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/51003\">R<\/a>,<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/1724787\"> R<\/a>].<\/li>\n<li><b>Legumes<\/b>. Concanavalin A (ConA) binds to<a href=\"https:\/\/selfhacked.com\/blog\/manganese\/\"> manganese<\/a>,<a href=\"https:\/\/selfhacked.com\/blog\/calcium-101\/\"> calcium<\/a>, and carbohydrates in that order; once it is completely bound, it triggers histamine release from mast cells [<a href=\"http:\/\/www.ncbi.nlm.nih.gov\/pubmed\/51003\">R<\/a>,<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/15933788\"> R<\/a>]<\/li>\n<\/ul>\n<div class=\"sh-summary\"><div class=\"sh-summary-content\">Some researchers have suggested that dietary lectins may trigger histamine release by attaching themselves to IgE bound to mast cells.<\/div><\/div>\n<h4>9) Fluoride<\/h4>\n<p><b>Fluoride may potentiate the activation of mast cells, <\/b>at least according to cell studies.
