A culture of acetic bacteria and fungi (Symbiotic Colony of Bacteria and Yeast, or SCOBY) ferments the sugared tea. Originally from China, the beverage made its way to Korea, Japan, and Russia, where its health benefits became well known (<a href=\"http:\/\/www.sciencedirect.com\/science\/article\/pii\/S0963996900000673\">R<\/a>).<\/p>\n<p>Traditionally, Kombucha is made using white sugar and<a href=\"https:\/\/selfhacked.com\/blog\/theaflavins\/\"> black tea<\/a>, but can also be made with green or oolong tea. After the tea is prepared, sugar, starter culture, and tea fungus are added to the mixture to ferment the tea for one to eight weeks (<a href=\"http:\/\/www.sciencedirect.com\/science\/article\/pii\/S0963996900000673\">R<\/a>).<\/p>\n<p>After this fermentation period, kombucha is ready to be taken out and stored in a clean container. It is consumed after fermentation is finished (<a href=\"http:\/\/www.sciencedirect.com\/science\/article\/pii\/S0963996900000673\">R<\/a>).<\/p>\n<p>Kombucha is believed to have many health benefits for immune function, inflammation, heart disease, and digestion (<a href=\"http:\/\/www.sciencedirect.com\/science\/article\/pii\/S0963996900000673\">R<\/a>).<\/p>\n<h3><span id=\"Antioxidant_Activity\"><a id=\"post-15790-_qivx8wfzn649\"><\/a><strong>Antioxidant Activity<\/strong><\/span><\/h3>\n<p>The antioxidant activity in tea and Kombucha can be attributed to their catechin and polyphenol content from the tea leaves (<a href=\"http:\/\/www.sciencedirect.com\/science\/article\/pii\/S0963996900000673\">R<\/a>).<\/p>\n<p>The fermentation process increases <a href=\"https:\/\/selfhacked.com\/blog\/oxidative-stress-101\/\">free radical<\/a> scavenging activities in Kombucha, so Kombucha has even higher antioxidant activity than unfermented tea (<a href=\"http:\/\/onlinelibrary.wiley.com\/doi\/10.1111\/1541-4337.12073\/full\">R<\/a>).<\/p>\n<h2><span id=\"Health_Benefits_of_Kombucha\"><a id=\"post-15790-_z6e53vsgobji\"><\/a>Health Benefits of Kombucha<\/span><\/h2>\n<p><img loading=\"lazy\" width=\"602\" height=\"377\" class=\"wp-image-90576\" src=\"https:\/\/selfhacked.com\/blog\/app\/uploads\/2017\/04\/word-image.png\" srcset=\"https:\/\/selfhacked.com\/app\/uploads\/2017\/04\/word-image.png 602w, https:\/\/selfhacked.com\/app\/uploads\/2017\/04\/word-image-480x301.png 480w\" sizes=\"(max-width: 602px) 100vw, 602px\" \/><\/p>\n<p>Although kombucha has many health benefits, its safety is not guaranteed because most of the studies are done on rats and other animals. More human studies must be done before its health benefits can be confirmed.<\/p>\n<p><strong>Kombucha is considered safe to drink for most people, but it has not been approved by the FDA for any health purpose and generally lacks solid clinical research.<\/strong><\/p>\n<h3><span id=\"Insufficient_Evidence_For\"><a id=\"post-15790-_6pf4ilvp2pk8\"><\/a>Insufficient Evidence For<\/span><\/h3>\n<p>The following purported benefits are only supported by limited, low-quality clinical studies. There is insufficient evidence to support the use of kombucha for any of the below-listed uses. Kombucha is considered safe for most people, but it should never be used in place of something your doctor recommends or prescribes.<\/p>\n<h4><a id=\"post-15790-_bp1yvnpfpc3\"><\/a>1) Gut Health<\/h4>\n<p>Kombucha is a <a href=\"https:\/\/selfhacked.com\/blog\/probiotics-good-bacteria\/\">probiotic<\/a> drink. Some researchers believe that the microorganisms found in the tea may balance intestinal <a href=\"http:\/\/selfhacked.com\/blog\/how-your-gut-microbiota-can-make-you-fat-or-thin\/\">microbiota<\/a>, improve digestion, fight against harmful bacteria, and aid gut processes (<a href=\"http:\/\/dx.doi.org\/10.1155\/2015\/591869\">R<\/a>).<\/p>\n<p>The bacteria and yeast used in the fermentation process have been found to promote the growth of beneficial microbes in the intestine. However, the studies listed below should not be interpreted as supportive of any health benefit.<\/p>\n<h4><a id=\"post-15790-_gc3xxzf0rpww\"><\/a>2) Blood Sugar<\/h4>\n<p>Both green and black tea extracts significantly lowered blood <a href=\"https:\/\/selfhacked.com\/blog\/glucose\/\">glucose<\/a> in rats (<a href=\"http:\/\/www.sciencedirect.com\/science\/article\/pii\/S0963996900000673\">R<\/a>).<\/p>\n<p>In diabetic rats, kombucha was a better suppressor of high blood glucose levels than black tea. Glucaric acid increases the efficiency of the liver\u2019s detoxification pathways. It is also believed to help in detoxification in the liver by binding with toxic metals and eliminating toxins (<a href=\"http:\/\/dx.doi.org\/10.1155\/2015\/591869\">R<\/a>).<\/p>\n<p>Kombucha\u2019s toxin removal action may help patients obtain relief from gout, arthritis, and kidney stones. Black tea and <a href=\"http:\/\/selfhacked.com\/blog\/green-tea\/\">green tea<\/a> Kombucha possesses greater inhibitory activity compared to oolong (<a href=\"http:\/\/onlinelibrary.wiley.com\/doi\/10.1111\/1541-4337.12073\/full\">R<\/a>).<\/p>\n<p>Kombucha can inhibit the growth of bacteria and various fungi (<a href=\"http:\/\/dx.doi.org\/10.1155\/2015\/591869\">R<\/a>).<\/p>\n<p>The presence of organic acids, particularly acetic acid, large proteins, and catechins in the beverage contributes to its antimicrobial activities (<a href=\"http:\/\/onlinelibrary.wiley.com\/doi\/10.1111\/1541-4337.12073\/full\">R<\/a>).<\/p>\n<ul>\n<li>Kombucha has <em>in vitro<\/em> antimicrobial efficacy against <em>Agrobacterium tumefaciens, Bacillus cereus, Salmonella choleraesuis<\/em> serotype Typhimurium, <em>Staphylococcus aureus<\/em>, and <em>Escherichia coli<\/em> (<a href=\"http:\/\/onlinelibrary.wiley.com\/doi\/10.1111\/1541-4337.12073\/full\">R<\/a>).<\/li>\n<li>It also inhibits the growth of <em>Entamoeba cloacae,<\/em> <em>Pseudomonas aeruginosa<\/em>, <em>B. cereus<\/em>, <em>E. coli<\/em>, <em>Aeromonas hydrophila<\/em>, <em>Salmonella typhimurium<\/em>, <em>Salmonella enteritidis<\/em>, <em>Shigella sonnei<\/em>, <em>Staphylococcus epidermis<\/em>, <em>Leuconostoc monocytogenes<\/em>, <em>Yersinia enterocolitica<\/em>, <em>Campylobacter jejuni<\/em>,<a href=\"https:\/\/selfhacked.com\/blog\/h-pylori-part-1\/\"> <em>Helicobacter pylori<\/em><\/a>, and <em>Candida albicans<\/em> (<a href=\"http:\/\/onlinelibrary.wiley.com\/doi\/10.1111\/1541-4337.12073\/full\">R<\/a>).<\/li>\n<\/ul>\n<h3><span id=\"Cancer_Research\"><a id=\"post-15790-_lvo4mpd8fv9h\"><\/a><strong>Cancer Research<\/strong><\/span><\/h3>\n<p>Kombucha&#8217;s antioxidant activity is believed to have potentially anticancer consequences (<a href=\"http:\/\/dx.doi.org\/10.1155\/2015\/591869\">R<\/a>), but there are no clinical trials done on the subject.<\/p>\n<p><a href=\"https:\/\/selfhacked.com\/blog\/green-tea\/\">EGCG<\/a>, a major tea polyphenol, can stop cancer cell growth in a dish (<a href=\"http:\/\/www.sciencedirect.com\/science\/article\/pii\/S0963996900000673\">R<\/a>).<\/p>\n<p>In a cell-based study, Kombucha tea extract decreased the survival of prostate cancer cells and prevented blood vessel formation (<a href=\"http:\/\/onlinelibrary.wiley.com\/doi\/10.1111\/1541-4337.12073\/full\">R<\/a>). Studies on isolated cancer cells very rarely translate to activity in animals or humans.<\/p>\n<h2><span id=\"Healthy_Components_of_Kombucha\"><a id=\"post-15790-_tsfkpsohc40\"><\/a>Healthy Components of Kombucha<\/span><\/h2>\n<p>Kombucha is rich in a number of bioactive and potentially beneficial compounds. These have been extensively studied on their own, outside of the context of kombucha. It is unclear to what extent these studies apply to kombucha as a whole, but researchers may use these studies as a jumping-off point for future research into this probiotic beverage.<\/p>\n<h3><span id=\"1_Tea_Polyphenols_and_Amino_Acids\"><a id=\"post-15790-_r0snxl35ut7p\"><\/a>1) Tea Polyphenols and Amino Acids<\/span><\/h3>\n<p>Many health benefits of Kombucha intake are similar to those of regular tea consumption, including the immune stimulation, digestive improvement, and improved metabolism (<a href=\"http:\/\/www.sciencedirect.com\/science\/article\/pii\/S0963996900000673\">R<\/a>).<\/p>\n<p>This is because most of the polyphenols and amino acids found in green and<a href=\"https:\/\/selfhacked.com\/blog\/theaflavins\/\"> black tea<\/a> are still present in Kombucha after fermentation (<a href=\"http:\/\/www.sciencedirect.com\/science\/article\/pii\/S0963996900000673\">R<\/a>).<\/p>\n<p>Tea contains chemicals called catechins and polyphenols. It helped repair the liver and protect against damage by metabolizing toxins (<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC2788564\/\">R<\/a>).<\/p>\n<p>However, Kombucha actually doesn&#8217;t have that much glucuronic acid. Its detoxifying properties might come from other acids found in the beverage (<a href=\"http:\/\/www.sciencedirect.com\/science\/article\/pii\/S0963996900000673\">R<\/a>).<\/p>\n<h3><span id=\"3_Gluconic_Acid\"><a id=\"post-15790-_3u5btfhnu7t2\"><\/a>3) Gluconic Acid<\/span><\/h3>\n<p>One of the main products of the fermentation process is gluconic acid. The acetic acid-producing bacteria converts<a href=\"https:\/\/selfhacked.com\/blog\/glucose\/?utm_source=seo&amp;utm_medium=selfhacked&amp;utm_campaign=id00002\"> glucose<\/a> to gluconic acid by breaking down <a href=\"http:\/\/selfhacked.com\/blog\/caprylic-acid\/\">caprylic acid<\/a>. Glucaric acid increases the efficiency of the liver\u2019s detoxification pathways. It does this by blocking the enzyme beta-glucuronidase. This increases the excretion of toxins and toxin reabsorption repeatedly in the liver and the gut (<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC3403982\/\">R<\/a>,<a href=\"http:\/\/www.altmedrev.com\/publications\/7\/4\/336.pdf\"> R<\/a>).<\/p>\n<p>There is ongoing research into the use of glucaric acid to prevent breast, colon, and prostate cancer (<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/9101079\">R<\/a>).<\/p>\n<h3><span id=\"5_Acetic_Acid\"><a id=\"post-15790-_uytqedpyxluv\"><\/a>5) Acetic Acid<\/span><\/h3>\n<p>In kombucha, acetic acid bacteria convert fructose (sugar) into acetic acid. The acetic acid can prevent fungal growth. It can also work with other kombucha constituents to stop microbes (<a href=\"http:\/\/www.sciencedirect.com\/science\/article\/pii\/S0963996900000673\">R<\/a>).<\/p>\n<p>In rats, acetic acid can help lower total cholesterol levels. Rats fed <a href=\"https:\/\/selfhacked.com\/blog\/health-benefit-of-vinegar\/\">vinegar<\/a> also have lower blood pressure than animals fed a diet not enriched with vinegar. These effects are associated with lower rates of heart disease (<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/16611381\">R<\/a>).<\/p>\n<p>Vinegar\u2019s main component is acetic acid. It protects human cell membranes (<a href=\"http:\/\/dx.doi.org\/10.1155\/2015\/591869\">R<\/a>).<\/p>\n<p>Butyric acid works with glucuronic acid to strengthen the gut walls and protect against parasites.
